Haenuki Rice – はえぬき
From Yamagata Prefecture; 1993. Very widely grown in Yamagata as table rice. Haenuki はえぬき has moderately large grains and is adaptable to cooler climates. The sake that is made with Haenuki is pretty good, so it’s worth checking out despite its humble roots.
