Ginpu 吟風 Sake Rice from Hokkaido

Ginpu is Hokkaido’s signature sake rice type. It produces a sake that is typically (but not always) a touch sweet with steamed white rice notes. Can range from light to big-bodied, but most examples are on the lighter side. Despite the lightness of the body– this is a sake grain that is still capable of producing rich flavor profiles.

Ginpu is grown entirely on the sprawling island of Hokkaido. This sake rice is a somewhat recent development and was registered in 2002. The year 2019 saw an impressive 1254 metric tons produced– up from 826 tons in 2014. This was good for 9th overall in Japanese shuzokotekimai production.
